NYC Day 5: The Big Night for Chef Jeff and Team

Excited that the day had arrived, and a little short on sleep due to their anticipation of the occasion, Chef Jeff and Team made themselves right at home in the legendary James Beard House on Saturday, October 19.


Dinner preparations got underway bright and early on a beautiful NYC morning to the hum of the city, music from the kitchen, and the chatter of a team preparing for the pivotal game.


Manhattans featuring Woodinville Whiskey, and Domaine St. Michelle’s Space Needle Cuvée Sparkling Wine, along with passed appetizers greeted our guests as they gathered. As if to make the Seattle evening theme complete, a light drizzle began to fall to signify it was time to get the dinner underway.


The Chef Team produced beautiful plates showcasing a wide range of Pacific Northwest cuisine and ingredients, including Skelly’s Butter Clams with red-onion bacon jam, Yakima Valley Corn Soup with Anderson lamb bacon and Dungeness crab, and Wild Chinook Salmon with honeycrisp apples, and Pacifique Absinthe … much to the delight of the James Beard House guests!


Many raved of their experience with the Cedar Paper Roasted Anderson Lamb Loin with Chanterelle and lobster mushrooms, Oregon truffle and Douglas fir jelly. The Mocha Braised RR Ranch Short Ribs with sunchokes, young crimson beet, and Theo’s cocoa nibs were also a hit. The wine pairings from our friends at Sparkman Cellars, Archery Summit, Betz Family Winery, and Andrew Will were another Washington touch that seemingly took the crowd directly to the PNW.

To top it all off, a Chocolate Pot de Crème with goat’s milk caramel, mountain huckleberries, and a Sonoris Port-Style Red, with a coffee chaser, left our guests satisfied and smiling.


When Chef Jeff had a chance to address the audience, he spoke emotionally about the honor and privilege to represent the James Beard Foundation, the Space Needle and the Pacific Northwest.  It truly was a special night!
